- Mix eggs and sugar in a large bowl until creamy.
- Add oil and vanilla extract, mixing well.
- Sift in dry ingredients (flour, baking powder, salt, cinnamon). Mix until just combined.
- Fold in chopped apples until evenly distributed.
- Pour batter into the prepared pan and smooth the top.
- Sprinkle sugar-cinnamon mixture generously on top.
- Bake for 50–60 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 10–15 minutes before removing the springform. Let cool fully on a rack.
