🍲 Beef Vegetable Soup Recipe

Ingredients

  • 700 g chuck roast, cut into chunks
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 cup green beans (or peas)
  • 1 can diced tomatoes (optional)
  • 6 cups beef broth
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or bay leaf

Instructions

  1. Heat oil in a large pot. Brown beef chunks on all sides.
  2. Add onion and garlic; sauté until soft.
  3. Pour in beef broth and add seasonings. Bring to a boil.
  4. Reduce heat, cover, and simmer 1½–2 hours until beef is tender.
  5. Add carrots, celery, potatoes, green beans, and tomatoes.
  6. Simmer 30 minutes more until vegetables are soft.
  7. Taste, adjust seasoning, and serve hot.
