
Ingredients
- 700 g chuck roast, cut into chunks
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 cup green beans (or peas)
- 1 can diced tomatoes (optional)
- 6 cups beef broth
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme or bay leaf
Instructions
- Heat oil in a large pot. Brown beef chunks on all sides.
- Add onion and garlic; sauté until soft.
- Pour in beef broth and add seasonings. Bring to a boil.
- Reduce heat, cover, and simmer 1½–2 hours until beef is tender.
- Add carrots, celery, potatoes, green beans, and tomatoes.
- Simmer 30 minutes more until vegetables are soft.
- Taste, adjust seasoning, and serve hot.
