🧾 Ingredients
- 8–10 small potatoes (washed, skin-on) 🥔
- 3 tbsp olive oil
- Salt & black pepper (to taste)
- 4 cloves garlic (minced) 🧄
- 1 cup heavy cream
- 1/2 cup milk
- 1 cup shredded mozzarella or cheddar 🧀
- 1/4 cup grated Parmesan cheese
- 1 tsp paprika
- 1 tsp dried parsley
👩🍳 Instructions
1. Prepare the potatoes
- Preheat oven to 200°C (400°F)
- Wash potatoes and slightly score or cut the tops
- Toss with olive oil, salt, and pepper
2. Roast
- Place potatoes in a baking dish
- Roast for 25–30 minutes until slightly crispy
3. Make the creamy sauce
- In a bowl, mix cream, milk, garlic, paprika, and half the cheese
4. Bake with sauce
- Remove potatoes from oven
- Pour sauce over them
- Sprinkle remaining cheese on top
5. Final bake
- Bake for another 15–20 minutes until golden and bubbly
