🧾 Ingredients
Cake Batter:
- 1 cup mashed sweet potatoes
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 3 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
Cinnamon Swirl:
- 1/2 cup brown sugar
- 1 tsp cinnamon
Honey Glaze:
- 1/2 cup powdered sugar
- 2 tbsp honey
- 1–2 tbsp milk (adjust for consistency)
- 1/2 tsp vanilla extract
👩🍳 Instructions
- Preheat oven to 180°C (350°F). Grease a baking dish.
- In a bowl, mix mashed sweet potatoes, sugar, brown sugar, oil, eggs, and vanilla.
- In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
- Gradually mix dry ingredients into wet until smooth.
- Pour half the batter into the pan.
- Mix cinnamon swirl ingredients and sprinkle over batter.
- Add remaining batter on top and lightly swirl with a knife.
- Bake for 35–45 minutes or until a toothpick comes out clean.
- Let cool slightly.
Glaze:
- Mix powdered sugar, honey, milk, and vanilla.
- Drizzle over warm cake.
