🍲🔥 Spicy Beef Tripe & Trotter Stew (Rich & Traditional Comfort Food)

📝 Ingredients:

  • 500g beef tripe (cleaned and cut into pieces)
  • 500g beef trotters (cut into chunks)
  • 300g beef chunks (optional, for extra richness)
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tomatoes (grated or finely chopped)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp chili flakes (adjust to taste 🌶️)
  • Salt to taste
  • 3 tbsp olive oil
  • 1 bay leaf
  • 1 liter water or beef broth
  • Fresh parsley (for garnish)

👩‍🍳 Instructions:

  1. Clean the tripe well with vinegar and salt, rinse thoroughly.
  2. In a large pot, add tripe and trotters. Cover with water and boil for 10 minutes, then drain (this removes strong odors).
  3. Heat olive oil in the pot, sauté onion and garlic until soft.
  4. Add tomatoes and tomato paste. Cook for 5 minutes until thick.
  5. Add spices:
    • Paprika
    • Black pepper
    • Turmeric
    • Cumin
    • Chili flakes
  6. Add tripe, trotters, and beef chunks. Mix well.
  7. Pour in water or broth and add bay leaf.
  8. Cover and simmer on low heat for 2–3 hours (until everything is tender and sauce is rich).
  9. Adjust salt and spice level.
