🍲🔥 Spicy Beef Tripe & Trotter Stew (Rich & Traditional Comfort Food)
📝 Ingredients:
- 500g beef tripe (cleaned and cut into pieces)
- 500g beef trotters (cut into chunks)
- 300g beef chunks (optional, for extra richness)
- 1 large onion (chopped)
- 3 cloves garlic (minced)
- 2 tomatoes (grated or finely chopped)
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp chili flakes (adjust to taste 🌶️)
- Salt to taste
- 3 tbsp olive oil
- 1 bay leaf
- 1 liter water or beef broth
- Fresh parsley (for garnish)
👩🍳 Instructions:
- Clean the tripe well with vinegar and salt, rinse thoroughly.
- In a large pot, add tripe and trotters. Cover with water and boil for 10 minutes, then drain (this removes strong odors).
- Heat olive oil in the pot, sauté onion and garlic until soft.
- Add tomatoes and tomato paste. Cook for 5 minutes until thick.
- Add spices:
- Paprika
- Black pepper
- Turmeric
- Cumin
- Chili flakes
- Add tripe, trotters, and beef chunks. Mix well.
- Pour in water or broth and add bay leaf.
- Cover and simmer on low heat for 2–3 hours (until everything is tender and sauce is rich).
- Adjust salt and spice level.
- Garnish with fresh parsley and serve hot 🔥
