Roasted Vegetable Tian Recipe

A beautiful and flavorful French-inspired vegetable bake made with layers of potatoes, zucchini, tomatoes, and sweet potatoes roasted to perfection with herbs and cheese.

Ingredients

  • 2 medium potatoes, thinly sliced
  • 2 sweet potatoes, thinly sliced
  • 2 zucchini, thinly sliced
  • 3 tomatoes, thinly sliced
  • 1 red onion, thinly sliced
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

Step 1: Prepare the Oven

Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.

Step 2: Season the Vegetables

In a small bowl, mix olive oil, garlic, thyme, Italian seasoning, salt, and pepper.

Step 3: Arrange the Vegetables

Layer the sliced potatoes, sweet potatoes, zucchini, tomatoes, and onions vertically in the baking dish, alternating colors and vegetables for a beautiful presentation.

Step 4: Add Seasoning

Brush or drizzle the garlic herb mixture evenly over the vegetables.

Step 5: Bake

Cover with foil and bake for 35 minutes.

Step 6: Add Cheese

Remove the foil, sprinkle mozzarella and Parmesan cheese over the top, then bake uncovered for another 20–25 minutes until golden and tender.

Step 7: Garnish & Serve

Sprinkle fresh parsley on top before serving. Enjoy warm as a side dish or light vegetarian meal.

Tips

  • Add crumbled feta cheese for extra flavor.
  • Fresh rosemary or basil works wonderfully in this dish.
