
Cheesy Mashed Potato Puffs 🧀🥔
Ingredients
- 2 cups mashed potatoes (cold works best)
- 1 large egg
- ½ cup shredded cheese (cheddar, mozzarella, or a mix)
- ¼ cup grated Parmesan cheese
- 2 tbsp milk or cream
- 2 tbsp melted butter
- 2 tbsp all-purpose flour
- Salt and black pepper, to taste
- Optional: garlic powder, chopped chives, or parsley
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a mini muffin pan.
- Mix mashed potatoes, egg, shredded cheese, Parmesan, milk, butter, flour, salt, and pepper until smooth.
- Fill each muffin cup about ¾ full.
- Bake for 20–25 minutes, until puffed and golden on top.
- Cool slightly, then remove from pan and serve warm.
Tips
- Use leftover mashed potatoes for best texture.
- Add cooked bacon bits or diced ham for extra flavor.
- Serve with sour cream, ranch, or garlic aioli for dipping.
