Cheesy Mashed Potato Puffs 🧀🥔

Ingredients

  • 2 cups mashed potatoes (cold works best)
  • 1 large egg
  • ½ cup shredded cheese (cheddar, mozzarella, or a mix)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp milk or cream
  • 2 tbsp melted butter
  • 2 tbsp all-purpose flour
  • Salt and black pepper, to taste
  • Optional: garlic powder, chopped chives, or parsley

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a mini muffin pan.
  2. Mix mashed potatoes, egg, shredded cheese, Parmesan, milk, butter, flour, salt, and pepper until smooth.
  3. Fill each muffin cup about ¾ full.
  4. Bake for 20–25 minutes, until puffed and golden on top.
  5. Cool slightly, then remove from pan and serve warm.

Tips

  • Use leftover mashed potatoes for best texture.
  • Add cooked bacon bits or diced ham for extra flavor.
  • Serve with sour cream, ranch, or garlic aioli for dipping.
