These pickled vegetables (carrots, cabbage, onions, cucumbers…) are easy to make and can last for weeks. Perfect as a side dish or healthy snack!

📝 Ingredients
- 2 carrots (julienned)
- 1 cucumber (sliced)
- 1 red onion (sliced)
- 1 cup cabbage (optional)
- 2 cups vinegar
- 2 cups water
- 1 tbsp salt
- 1 tbsp sugar
- 2 garlic cloves
- 1 tsp black pepper
- Optional: chili flakes 🌶️
👩🍳 Instructions
1. Prepare vegetables
Wash and cut all vegetables.
2. Make brine
In a pot, heat water + vinegar + salt + sugar until dissolved.
3. Fill jars
Place vegetables, garlic, and spices into clean jars.
4. Pour liquid
Pour hot brine over vegetables until fully covered.
5. Rest
Close jars and let cool, then refrigerate for at least 24 hours.
6. Enjoy
Ready to eat after 1 day, better after 2–3 days 😍
