Fried Alligator (Southern Style)

vCrispy on the outside, tender and mild on the inside — fried alligator tastes a bit like a mix between chicken and firm fish. It’s a popular Southern delicacy, especially in Louisiana.


📝 Ingredients

  • 1 lb (450 g) alligator tail meat, cut into bite-size pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cayenne pepper (optional)
  • Oil for frying

👩‍🍳 Instructions

1️⃣ Marinate

Place the alligator pieces in a bowl and cover with buttermilk.
Refrigerate for at least 1 hour (this helps tenderize the meat).


2️⃣ Prepare Coating

In a separate bowl, mix flour, cornmeal, salt, pepper, paprika, garlic powder, and cayenne.


3️⃣ Heat Oil

Heat oil in a deep pan to 350°F (175°C).


4️⃣ Coat & Fry

Remove alligator from buttermilk, letting excess drip off.
Dredge in the flour mixture until fully coated.
Fry in batches for about 3–5 minutes, until golden brown and crispy.

Do not overcrowd the pan.


5️⃣ Drain & Serve

Place on paper towels to drain excess oil.
Serve hot with remoulade, spicy mayo, or lemon wedges.
