
Instructions:
- Preheat your oven to 375°F (190°C). Grease a muffin tin with butter or cooking spray.
- In a large bowl, mix the mashed potatoes, eggs, cheddar cheese, Parmesan cheese, green onions, garlic powder, black pepper, and salt. If the mixture seems too soft, add breadcrumbs for structure.
- Scoop the mixture into the muffin tin, filling each cup about ¾ full. Press down slightly to compact.
- Bake for 20-25 minutes, or until the muffins are golden brown and crispy on the edges.
- Let them cool for a few minutes before carefully removing them from the tin.
- Serve warm and enjoy!
