Potato Rolls with Chicken

Ingredients

For the Potato Dough:

  • 2 cups (500 g) mashed potatoes (cooled)
  • 1 egg
  • 2 tbsp oil or melted butter
  • 1 tsp salt
  • 1 tsp baking powder
  • 1½–2 cups (190–250 g) all-purpose flour

For the Filling:

  • 1½ cups cooked chicken, finely chopped
  • ½ small onion, finely diced
  • ½ cup shredded cheese (optional)
  • Salt & pepper to taste
  • 1 tbsp oil

Instructions

  1. Prepare filling:
    Heat oil in a pan. Sauté onion until soft. Add chopped chicken, season with salt and pepper. Cook 2–3 minutes. Let cool. Stir in cheese if using.
  2. Make dough:
    In a bowl, mix mashed potatoes, egg, oil, salt, and baking powder.
    Gradually add flour until a soft, non-sticky dough forms.
  3. Shape rolls:
    Roll dough into a rectangle (about ¼ inch thick).
    Spread chicken filling evenly.
    Roll up tightly like a log.
  4. Bake:
    Place seam-side down on a lined baking sheet.
    Brush with a little milk or egg wash.
    Bake at 375°F (190°C) for 25–30 minutes until golden.
  5. Serve:
    Let cool slightly, then slice into rolls.

Soft, savory, and perfect for lunch or dinner.
