White Chocolate Strawberry Cheesecake

Ingredients

For the crust:

  • 2 cups graham cracker crumbs
  • ½ cup melted butter
  • 2 tbsp sugar

For the cheesecake filling:

  • 16 oz (450 g) cream cheese, softened
  • 1 cup white chocolate, melted and slightly cooled
  • ¾ cup sugar
  • 2 large eggs
  • 1 cup heavy cream or sour cream
  • 1 tsp vanilla extract

For the strawberry topping:

  • 2 cups fresh strawberries, sliced
  • ⅓ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water

Instructions

  1. Crust:
    • Mix crumbs, melted butter, and sugar.
    • Press into the bottom of a greased 9-inch springform pan.
    • Bake at 180°C (350°F) for 10 minutes. Set aside.
  2. Filling:
    • Beat cream cheese and sugar until smooth.
    • Add melted white chocolate and vanilla.
    • Beat in eggs one at a time.
    • Mix in cream (or sour cream) until smooth.
    • Pour over crust.
  3. Bake:
    • Bake at 160°C (325°F) for 50–60 minutes, until center is just set.
    • Cool completely, then refrigerate at least 4 hours.
  4. Strawberry topping:
    • Cook strawberries, sugar, and lemon juice over medium heat.
    • Stir in cornstarch slurry and cook until thick.
    • Cool, then spread over chilled cheesecake.
  5. Serve:
    • Chill well, slice, and enjoy 🍓🤍
