
White Chocolate Strawberry Cheesecake
Ingredients
For the crust:
- 2 cups graham cracker crumbs
- ½ cup melted butter
- 2 tbsp sugar
For the cheesecake filling:
- 16 oz (450 g) cream cheese, softened
- 1 cup white chocolate, melted and slightly cooled
- ¾ cup sugar
- 2 large eggs
- 1 cup heavy cream or sour cream
- 1 tsp vanilla extract
For the strawberry topping:
- 2 cups fresh strawberries, sliced
- ⅓ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 2 tbsp water
Instructions
- Crust:
- Mix crumbs, melted butter, and sugar.
- Press into the bottom of a greased 9-inch springform pan.
- Bake at 180°C (350°F) for 10 minutes. Set aside.
- Filling:
- Beat cream cheese and sugar until smooth.
- Add melted white chocolate and vanilla.
- Beat in eggs one at a time.
- Mix in cream (or sour cream) until smooth.
- Pour over crust.
- Bake:
- Bake at 160°C (325°F) for 50–60 minutes, until center is just set.
- Cool completely, then refrigerate at least 4 hours.
- Strawberry topping:
- Cook strawberries, sugar, and lemon juice over medium heat.
- Stir in cornstarch slurry and cook until thick.
- Cool, then spread over chilled cheesecake.
- Serve:
