For the Dough

  • 4 cups all-purpose flour
  • 2 ¼ tsp active dry yeast
  • 1 cup warm milk
  • ¼ cup sugar
  • 2 eggs
  • ¼ cup melted butter
  • 1 tsp vanilla extract
  • Pinch of salt

For the Filling

  • 2 cups farmer’s cheese or ricotta
  • ¼ cup sugar
  • 1 egg yolk
  • 1 tsp vanilla
  • Lemon zest (optional)
  • Raisins (optional)

Topping

  • Powdered sugar

👩‍🍳 Instructions

1️⃣ Prepare the Dough

  1. In a bowl, mix warm milk, yeast, and sugar. Let sit for 10 minutes until foamy.
  2. Add eggs, butter, vanilla, and salt.
  3. Gradually mix in flour until a soft dough forms.
  4. Knead for 8–10 minutes until smooth.
  5. Cover and let rise for 1 hour.

2️⃣ Make the Filling

  1. Combine cheese, sugar, egg yolk, vanilla, and lemon zest.
  2. Stir until creamy.

3️⃣ Shape the Pastries

  1. Roll dough to about ¼ inch thickness.
  2. Cut into squares.
  3. Add a spoonful of filling to the center.
  4. Fold corners toward the middle and pinch lightly.

4️⃣ Bake

  1. Place on baking tray lined with parchment paper.
  2. Let rest 15 minutes.
