🥕 Hearty Vegetable Soup (Easy, Healthy & Delicious)

🛒 Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can diced tomatoes (400g)
- 1/2 cup small pasta or rice (optional)
- 6 cups vegetable broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt & black pepper (to taste)
- Fresh parsley (for garnish)
👩🍳 Instructions:
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft and fragrant.
- Stir in carrots, celery, zucchini, and green beans. Cook for 5 minutes.
- Add diced tomatoes, broth, oregano, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add pasta or rice (optional) and cook until tender.
- Taste and adjust seasoning.
- Serve hot, garnished with fresh parsley.
