🛒 Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can diced tomatoes (400g)
  • 1/2 cup small pasta or rice (optional)
  • 6 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt & black pepper (to taste)
  • Fresh parsley (for garnish)

👩‍🍳 Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft and fragrant.
  3. Stir in carrots, celery, zucchini, and green beans. Cook for 5 minutes.
  4. Add diced tomatoes, broth, oregano, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add pasta or rice (optional) and cook until tender.
  7. Taste and adjust seasoning.
  8. Serve hot, garnished with fresh parsley.
