🧾 Ingredients
- 2 cups (250g) all-purpose flour
- 1 1/2 cups (300g) sugar
- 1/2 tsp baking powder
- 1/2 tsp salt
- 32 oz (900g) mixed dried fruits
- 1 cup chopped pecans (or walnuts)
- 3 large eggs
- 1/3 cup (80ml) orange juice
- 1/2 cup (120g) butter, softened
- 1/2 cup (120ml) molasses
👨🍳 Instructions
1. Prepare oven
Preheat oven to 160°C (320°F).
Grease and line a cake pan.
2. Mix dry ingredients
In a large bowl, combine flour, baking powder, and salt.
3. Add fruits & nuts
Stir in mixed dried fruits and chopped pecans.
Coat well with flour mixture (this prevents sinking).
4. Mix wet ingredients
In another bowl, beat eggs, sugar, butter, orange juice, and molasses until smooth.
5. Combine
Pour wet mixture into dry ingredients.
Mix until everything is well combined.
6. Bake
Pour batter into prepared pan.
Bake for 60–70 minutes until a toothpick comes out clean.
7. Cool & serve
Let cool completely before slicing.
