🧾 Ingredients

  • 700g pork belly (cut into cubes)
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar (or honey)
  • 1 tbsp fish sauce (optional)
  • 1 tbsp oyster sauce
  • 3 cloves garlic (minced)
  • 1 tsp chili flakes (optional)
  • 1 tbsp vinegar (rice or white)
  • 1 tbsp oil
  • 1/2 cup water

👩‍🍳 Instructions

  1. Boil pork belly
    • Add pork to a pot with water.
    • Boil for 10–15 minutes to remove impurities.
    • Drain and pat dry.
  2. Sear
    • Heat oil in a pan.
    • Fry pork until golden and slightly crispy.
  3. Make sauce
    • Add garlic and sauté briefly.
    • Pour in soy sauce, oyster sauce, fish sauce, sugar, vinegar, and water.
  4. Simmer
    • Cook on medium heat until sauce thickens and coats the pork.
  5. Caramelize
    • Let sauce reduce until sticky and glossy.
  6. Serve
    • Serve hot with rice or as a side dish.
