Crispy Caramelized Pork Belly (Sweet & Spicy Glaze)

🧾 Ingredients
- 700g pork belly (cut into cubes)
- 3 tbsp soy sauce
- 2 tbsp brown sugar (or honey)
- 1 tbsp fish sauce (optional)
- 1 tbsp oyster sauce
- 3 cloves garlic (minced)
- 1 tsp chili flakes (optional)
- 1 tbsp vinegar (rice or white)
- 1 tbsp oil
- 1/2 cup water
👩🍳 Instructions
- Boil pork belly
- Add pork to a pot with water.
- Boil for 10–15 minutes to remove impurities.
- Drain and pat dry.
- Sear
- Heat oil in a pan.
- Fry pork until golden and slightly crispy.
- Make sauce
- Add garlic and sauté briefly.
- Pour in soy sauce, oyster sauce, fish sauce, sugar, vinegar, and water.
- Simmer
- Cook on medium heat until sauce thickens and coats the pork.
- Caramelize
- Let sauce reduce until sticky and glossy.
- Serve
- Serve hot with rice or as a side dish.
